Reasons to love Sheet Pan Salmon with Sweet Potatoes and Broccoli

All you need for equipment is a brush, baking sheet and parchment paper.
There is a lot of health benefits of salmon, broccoli and sweet potatoes.
It’s wonderful for a quick meal prep.
This is a great meal for the when you have little time to spare to worry about dinner.
Ingredients
This easy sheet pan salmon with sweet potato and broccoli recipe takes minimal ingredients. You will need:
- Salmon. I chose Atlantic Salmon from Trader Joe’s. I prefer the thickness of the salmon and the price point. Also, Trader Joe’s salmon is sold right around 1 pound or so which is perfect for our portions. I also suggest Costco for salmon however it is a big portion. One thing to keep in mind is that you want to keep the salmon whole for this sheet pan recipe. This will ensure an even cook time for the salmon and other ingredients.
- Sweet potatoes. For this recipe you will want to peel and cube them about medium size. You don’t want the salmon to be too small or too big of a piece because you want to ensure the salmon cooks evenly.
- Broccoli Florets. You can buy them in a bag already prepared or as a whole bunch. If buying whole, wash and rinse the broccoli well and cut down to size not thinner or smaller than the sweet potatoes.
- Extra Virgin Olive Oil. Sesame oil works as well.
- Ground Mustard. Honey mustard salmon can be made with dijon mustard as well. I didn’t think there was much of a difference in taste when I was recipe testing. However I think ground mustard is really delicious!
- Honey. Plain honey is perfect. Maple syrup works too.
- Spices. Garlic powder, kosher salt and black pepper.
- Lemon Slices. I like to sqeeze a bit of the lemon juice over the salmon and then place the lemon slice on top.
- Sesame Seeds. This is an optional garnish.
Directions
1. Start with preheating the oven to 425 degrees. Line a large sheet pan with parchment paper or aluminum foil.
2. Place salmon in the center of the prepared sheet pan. Scatter the diced sweet potatoes and broccoli around the fish in a single layer.
3. Season everything with the garlic powder, salt and pepper. Drizzle the olive oil on top the salmon and the sweet potatoes and broccoli.
4. In a small dish, mix the mustard with the honey and brush the salmon gently with the mixture. If you have left over glaze, gently brush some on the sweet potatoes and broccoli.
5. Place the sliced lemons on top, giving them a little sqeeze to release the juices. Sprinkle the sesame seeds on top of the salmon.
6. Let the salmon cook for 25 minutes or until salmon is opaque and sweet potatoes are tender.
Some tips and alternatives for this easy sheet pan dinner
You don’t want to overcrowd the sheet pan. Overcrowding will the food to cook unevenly.
For easy clean up, use parchment paper.
Make sure the salmon is right around a pound and keep the salmon whole.
Dinner ideas are endless with sheet pan recipes! You can substitute vegetables and use red bell peppers, green beans, brussels sprouts, and red onion.
For extra flavor, add onion powder or garlic salt.
If you don’t want to use honey mustard, you can make this dish with a homemade teriyaki sauce or any of your favorite sauces.
Brown sugar and soy sauce (or coconut aminos) on salmon is ALWAYS amazing!
Crush up whole garlic cloves to replace garlic powder.
To add a little bit of heat, throw on some red pepper flakes.
Instead of dicing sweet potatoes, you can cut them into sweet potato fries. Also baby potatoes would taste great with this dish!

Reheat in the microwave for about 1-2 minutes.
I don’t recommend freezing this dish.
