Gluten Free Halloween Brownies

Who knew Halloween and the whole month of October would be my son’s favorite holiday! The minute I knew that I was going to create Gluten Free Halloween Brownies and needed to go shopping for the ingredients- the eagerness in his step to get in the car and go accelerated.

We enter the store and he spots some skulls and he goes running to them and shouts, “Mommy I love Halloween!!!!!” and then starts to put random halloween things in the cart. LOL.

I hate to break your heart but it doesn’t work like that- let’s stick to what we need!

Here’s what we came out with:

Halloween cake moldings, halloween cupcake holders and toppers, halloween candy, black branches, “creepy” cloth and way too many bags of orange, green and black “meltables”. Which were 1/2 off by the way, so maybe I might go back for more and stock up! Halloween is gettin’ real around here and yes I’m fully aware we are only in September. LOL

I love going to Michael’s when they have sales! {my bank account disagrees}

Ghosts, Goblins and Gluten Free Halloween Brownies

I use the Gluten Free Chocolate Chip Brownie Mix from Trader Joe’s to keep this easy- and gluten free. The mix is delicious with a fudge middle while the texture on the top is a nice crust. It’s similar to the Ghirardelli Brownies texture but a little more chocolatey in the middle.

For the toppings, I like to use the candy bark decorating kit from Michael’s or any of their festive sprinkles and spooky eyes. Warning though- the sprinkles can get messy and your kids may want to eat them without being on top of any brownies. LOL

The sprinkles are cute on cookies or cake pops as well!

Gluten Free Halloween Brownies

Equipment

  • large mixing bowl
  • Spatula
  • Whisk
  • brownie pan 8x8x2
  • parchment paper

Ingredients
  

  • 1 box gluten free brownie mix chocolate chip gf brownie mix from Trader Joe's
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1 pack halloween decorations- orange and black such as spooky eyes and halloween sprinkles

Instructions
 

  • Preheat the oven to 350 degrees.
  • Grease the brownie pan and then line it with a sheet of parchment paper.
  • In the bowl, mix together the oil and egg and then whisk in the water.
  • Add the brownie mix and gently combine.
  • Pour the batter into the pan.
  • Bake for about 35-40 minutes, or until a toothpick inserted in the center is clean.
  • When the brownies are done, carefully remove from the oven and let them cool for 10 minutes.
  • Add the spooky eyes and sprinkles by scattering evenly on the top.
  • Divide into 9 sections and serve.
  • Enjoy!
