Cumin Roasted Sweet Potatoes

Ingredients needed for these Cumin Roasted Sweet Potatoes

  • Extra virgin olive oil. Avocado oil works too but will slightly change the flavor. 
  • Sweet potatoes. When cutting the sweet potatoes, ensure they are even in size. This will help them cook evenly.
  • Spices such garlic powder, cumin, paprika, coriander and dried basil.
  • Kosher salt. Salt is always optional. I like to add just a touch.
  • Black pepper.
  • Cilantro. Fresh cilantro or Italian parsley both taste good.

How to prepare Cumin Sweet Potatoes

Step One: Preheat oven to 375 degrees F. Rinse, peel and cut the sweet potatoes into 1 inch cubes.

Step Two: Place them on a baking sheet lined with parchment paper. Drizzle the olive oil evenly over the top and then add the dry seasonings. Mix and incorporate well with your hands. Pro tip: Use gloves for easy clean up.

Step Three: Roast the sweet potatoes for about 25 minutes, rotating the pan half way through. The cumin sweet potatoes wil lbe done when they are golden and tender.

Step Four: Remove from the oven and let them cool for 5 minutes. Sprinkle with chopped cilantro and serve with your favorite main dishes. 

Storing Roasted Sweet Potatoes with Cumin

Store any leftovers in an airtight container in the fridge for 2-3 days. Reheat in the microwave for about 1 minute.

How to add more sweet potatoes to your diet

I love sweet potatoes because they are versatile, healthy and easy to prepare. The variations are endless! Since they are naturally sweet , they can be used in either sweet or savory recipes.

If you love sweet potatoes like I do, here are some ideas on how to enjoy them and incorporate them more into your meal planning:

  • Steam them in the microwave for 6 minutes, add a little butter (or ghee) and salt and you’re good!
  • As a French fry- air fry or oven roast them.
  • Baked potato with the skin on.
  • Roast them and add to a salad like in my Murasaki Sweet Potato Salad.
  • Rosemary Sweet Potato Mash– This recipe is vegan but regular milk and butter can be used.
  • Pre work out snack- Steam in the microwave then add almond butter on top. Trader Joe’s has smaller sweet potatoes that come in a bag that are the perfect size for a snack. 
  • Thinly sliced potato chips- Hello sweet potato nachos with meat, black beans, sour cream and a hint of fresh lime juice! Bake them in the oven to avoid deep frying.
  • As a dessert, yup- my my my, sweet potato pie!!!

Helpful tips

  • Sweet potatoes are easy to prep and store ahead of time. I like to peel at least 5-6 potatoes then cube them all up and store them into my snap ware glass containers. By doing this, it will make it easier for you when you want to cook them and are short on time. 
  • Avoid overcrowding the pan. If the pan is is too crowded, the sweet potatoes will steam and not roast.
  • If you have a lot of people to feed or you will go through sweet potatoes fast, I recommend Costco. They have the best prices. However you can find them year round at any grocery store. 
  • This recipe is interchangable with Yukons or Russet white potatoes.

Notes:
STORAGE: Store in air tight container in the fridge for up to 3 days. 
REHEAT: Reheat using the microwave on high for about 60-90 seconds.
