Easy Strawberry Banana Bread
I have found myself taste testing all the different types of gluten free flours lately. As I’ve been bread baking, crust making, loaf experimenting, I’ve been trying to figure which brand works best for what. One day, my toddler son says, “Mommy, I want Starbucks Banana Bread!” . Well, well, well – here is my recipe for this Easy Strawberry Banana Bread {thanks son for the inspo}featuring Just About Food Organic GF Flour from Costco. I’m not sure how long Costco has been carrying this particular brand but I know they often switch out what they carry and also it can vary depending on locations as well.
I tried baking a regular loaf of bread recently and noticed the dense texture and thought to myself this may work with banana bread or any quick bread recipe. I regularly use a blend of oat , almond and coconut flour. But for this recipe, I combined it with only almond flour.
I added a little more apple sauce than I normally do to ensure this would turn out moist. And for my son, he gobbled it up and I’m glad he enjoyed the homemade bread and we didn’t have to make the trip to Starbucks after all. 🙂
Can you freeze this bread?
Yes, of course! My suggestion is that you slice the loaf and use a freezer safe zip lock bag and freeze them individually. You can reheat by microwaving for 20-30 seconds.
Can bananas ever be too ripe for banana bread?
I say no! The more ripe, the better. Whenever I am planning to make a quick bread loaf containing banana, I normally buy my bananas on a Sunday and I look for the ones with no green. If they become super ripe by Thursday and you can’t bake them until the weekend, place them in the fridge and they will be fine. Placing them in the fridge will help keep those pesky fruit flies away!
Any substitutions you can suggest?
This is made with a lot of love… and surprisingly there is no butter in here! {because you know lots of butter equals love, right?} However, you can add some on top after you slice off a warm piece. I intentionally made this vegan and gluten free but if gluten doesn’t bother you, you can replace the flour with all purpose flour or wheat flour. If you would like to use dairy, I would suggest swapping out by using regular milk or greek yogurt to replace the apple sauce. Let me know if you try this recipe with different ingredients!

Ingredients
- 1 1/2 cup gluten free flour from Just About Foods, Costco
- 1/2 cup almond flour
- 1/2 teaspoon fine sea salt
- 1/3 cup brown sugar
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 large bananas ripe, mashed
- 8 oz apple sauce
- 1/3 cup coconut oil
- 1/2 teaspoon vanilla extract
- 4 large strawberries ripe, sliced
- canola oil spray PAM
Instructions
- Preheat the oven to 350.
- In a large bowl, combine the flours, sea salt and brown sugar. Whisk gently to combine. Then add the baking powder and baking soda and stir.
- In another bowl, combine the wet ingredients.
- Then add to the dry ingredients. Gently combine. Spray a loaf pan with canola oil and add the batter. Place the sliced strawberries on top.
- Bake for 45-55 minutes. Enjoy!
