Gluten Free Strawberry Banana Bread

I have enjoyed MANY regular banana bread recipes in my lifetime and I’m always up for the challenge to create different ways banana bread can be enjoyed, especially if you have allergies or intolerances to foods. This is a simple and easy recipe anyone can make.

Why this recipe works

Pro Tip: Whenever I am planning to make a quick bread loaf containing banana, I normally buy my bananas on a Sunday and I look for the ones with no green. If they become super ripe by Thursday and you can’t bake them until the weekend, place them in the fridge and they will be fine. Placing them in the fridge will help keep those pesky fruit flies away!

Ingredients

  • Gluten free flour all purpose flour blend. Use 1:1.
  • Almond flour.
  • Fine sea salt.
  • Brown sugar. White sugar or organic cane sugar works too.
  • Baking powder.
  • Baking soda.
  • Mashed bananas.  Overripe bananas are the best.
  • Apple sauce.
  • Coconut oil
  • Vanilla extract
  • Fresh juicy strawberries. This is best during strawberry season or when the strawberries are super red.
  • Canola oil spray for the loaf pan.

How to make Gluten Free Strawberry Banana Bread  

Step One: Preheat the oven to 350 F. 

Step Two: In a large mixing bowl, combine the flours, sea salt and brown sugar. Whisk gently to combine. Then add the baking powder and baking soda and stir.

Step Three: In another bowl, combine the wet ingredients (apple sauce , coconut oil and vanilla). 

Step Four: Then add to the dry ingredients. Gently combine. Spray a loaf pan with canola oil and add the batter. Place the sliced strawberries on across the top of the banana bread. 

Step Five: Bake for 45-55 minutes. Bread will be done when a toothpick inserted in the middle comes out dry.  Let the quick bread cool for about 15 minutes and transfer to a wire rack before cutting into it.  You can enjoy it warm or at room temperature.

Storing and reheating

Store in an airtight container or in plastic wrap in the fridge for up to 2-3 days. Reheat in the microwave for about 30-45 seconds. To freeze slices, wrap them in parchment paper and place in a freezer safe container for up to 3 months.

Helpful tips for Gluten Free Strawberry Bread

  • Use 1:1 gluten free flour blend. This will contain xanthan gum already. If your gluten free flour doesn’t contain it, you will need to purchase xanthan gum.
  • Don’t overmix the batter.
  • Make sure the bananas are very ripe as this provide natural sweetness and texture.
  • Be sure to have the strawberries dry all the way before putting them into the batter.
  • If it starts to brown too fast, place a loose foil sheet over the top after about 35-40 minutes.

Serving suggestions 

  • Serve this delicious quick bread warm with a touch of vegan butter or almond butter on top.
  • Serve as a part of a wonderful brunch spread with Crustless Zucchini QuicheBreakfast PaellaZa’atar Potatoes and fresh fruits. 
  • Enjoy as a dessert with a strawberry jam and lemon curd on top. Or add in chocolate chips like my Strawberry Jam Muffins.
  • Place a spoonful of greek yogurt on top with additional sliced strawberry or use vegan yogurt.

  • Then add to the dry ingredients. Gently combine with a spatula. Spray a loaf pan with canola oil and add the batter. Place the sliced strawberries over the top of the banana bread. 
  • Bake for 45-55 minutes or until a toothpick inserted in the middle comes out dry and clean. Let cool for about 10-15 minutes before transferring to a wire rack.
