Easy Crustless Zucchini Quiche with Goat Cheese


A delicious way to enjoy summer zucchini is making my Easy Crustless Zucchini Quiche with Goat Cheese. It’s one of my favorite recipes and it will be yours too! This crustless zucchini quiche recipe uses fresh zucchini, red onion and has an awesome creamy texture from the combination of heavy cream and lemon infused goat cheese. Trust me when I say- you won’t miss the pie crust!

This is a great option for low carb diets and the perfect recipe to add to your breakfast table! You can serve this as a main dish or light lunch with a simple green salad or enjoy it with multiple breakfast items.

Crustless Zucchini Quiche filling ingredients

The main ingredients for this quiche are simple and delicious. All you need is:

  • large eggs
  • heavy cream
  • unsalted butter
  • lemon infused goat cheese
  • red onion
  • medium zucchini, keep the skin on
  • salt and pepper

Other ingredients that can be used

Another reason to love quiche recipes- they are versatile!  

Fresh herbs and feta cheese is always delicious. Bacon, pancetta or sausage and mozzarella cheese can be added to the egg mixture. Or you can make it an all cheese quiche.

Heavy cream can be substituted with milk or a plant based such as almond milk. 

If you can’t locate lemon infused goat cheese, regular goat cheese can be used and add lemon zest. 

Yellow onion, green onions or sweet onions are delicious.

Different veggies will work for this crustless quiche such as broccoli and use cheddar cheese or spinach with parmesan cheese.

Cooking spray/nonstick spray or olive oil works if you don’t want to use butter for the prepared pan.

Preparing zucchini for quiche

Most recipes call for grated zucchini which is done by using a regular grater. But a great way to get zucchini grated fast is by using a food processor. Wash the zucchini and cut off the ends. Then cut it into about 2-3 chunks, depending on the size of your food processor. Place it in the food processor and on chop mode, pulse for about 15 seconds or until its completely chopped.

Using the food processor really gives you the perfect shredded zucchini in no time!

Then place the zucchini on paper towels and place another paper towel on top. Press down to release the excess liquid from the zucchini. You would prepare the zucchini the same way if you were using it for chocolate zucchini bread or muffins.

How to make Crustless Zucchini Quiche with Goat Cheese

  1. Start with preheating the oven to 350 degrees F. Grease your pie plate or pie pan with the butter.
  2. In a large bowl, add the eggs and the heavy cream. Add a bit of salt and pepper. Whisk to combine.
  3. In a food processor, add the zucchini and on chop mode, pulse for about 20-30 seconds. Place the zucchini on a sheet tray or cutting board lined with paper towels. Remove excess liquid by placing paper towels on top and press down to release the moisture.
  4. Add half of sliced onions and zucchini to the pie pan. Then pour in half of the egg mixture. 
  5. Layer in half of the goat cheese. Then add remaning of the zucchini. 
  6. Pour the rest of the egg on top and finish layering in the remaining goat cheese and red onion into the zucchini mixture.
  7. Place the pie dish into the oven and bake 45-60 minutes or until the top of the crustless quiche is golden.

Ingredients
  

  • 6 large eggs
  • 1 cup heavy cream
  • 1 tablespoon unsalted butter
  • 4 ounce lemon infused goat cheese
  • 1/2 cup red onion sliced
  • 1 cup zucchini grated
  • 1/2 teapsoon salt
  • black pepper as needed

Instructions
 

  • Preheat the oven to 350 degrees F. Grease a pie pan with the butter.
  • In large mixing bowl, add the eggs and the heavy cream. Season with salt and pepper. Whisk to combine.
