Juicy Stovetop Bison Burgers

If you love homemade burgers, then this Bison Burger is a must-try! With over 35 grams of protein, it’s juicy, tasty, and easy to make on the stove top. This Bison Burger is made with egg, my All Purpose Spice Mix, onion, and roasted red peppers. It’s sandwiched in between a whole wheat bun and topped with a herb garlic yogurt sauce for all the Mediterranean feels.

An open-faced bison burger with a beef patty and white sauce on a bun, served with lettuce, tomato slices, French fries, and small cups of ketchup and white dipping sauce on a white plate.
Bison Burgers.

I’ve been eating bison for years because it’s lower in fat than beef and high in protein. Bison can be enjoyed in many ways such as Bison Meatloaf, Bison Meatballs and Bison Enchiliadas

Why this recipe works

  • Versatility: Just like my Turkey Basil Burger– cook this burger on the stove top or the grill. Add cheese if you like. Enjoy with your favorite buns or lettuce wrapped.
  • High in protein: One 4 ounce patty provides over 20 grams of protein.
  • Easy dinner: This bison burger is great for busy weeknights or meal prep. Prep the patties and the herb garlic yogurt sauce ahead of time and cook off the next day.

Ingredients needed for this Bison Burger recipe

A flat lay of ingredients for bison burgers in bowls labeled: extra virgin olive oil, onions, roasted red peppers, Greek yogurt, ground bison, spices, egg, garlic, salt and pepper, fresh herbs, and a whole lemon on a white surface.

  • Ground bison.
  • White onion.
  • Roasted red pepper. Roasted red pepper and onion not only add flavor but also moisture.
  • Egg. This works as a binder for the bison burger patty.
  • All Purpose Seasoning. This is my homemade spice mix that consists of cumin, paprika, cayenne, dried basil, dried parsley, onion and garlic powder plus salt and pepper.
  • Herb Garlic Yogurt Sauce: A mix of full fat greek yogurt, garlic, lemon jiuce, olive oil and fresh dill and parsley.

How to make Bison Burgers

Step One: Add all the ingredients to a large bowl.  Using your hands, gently combine just until mixed.

Step Two: Form 4 patties- shape into a ball then gently press down.

Four-step collage: 1) Ground bison burger mixture in a glass bowl. 2) Four formed patties on parchment paper. 3) Two burgers cooking in a frying pan. 4) Bowl of creamy white sauce with herbs—all on a white surface.

Step Three: Using a non-stick pan, spray with non-stick spray over medium heat. Place 2 patties down and cook for about 5-6 minutes then flip it over and cook the other side for about 5 minutes. Internal temp should be about 155-165 degrees F.

Step Four: When the burgers are done, remove and let them sit for a few minutes. Assemble your burger as desired.

Storing and reheating

Store bison burger patties in an airtight container in the fridge for up to 2-3 days.

Helpful tips for Bison Burgers

  • Do not overwork the ground bison.
  • You can find ground bison at most major supermarkets or Costco.
  • Gather the spices in a small bowl, mix and then distribute the spices over the bison.
  • Place the patties in the fridge for about 30 minutes to firm back up. This will help the patty stay intact when cooking.
  • If grilling, make sure the grill plates are oiled well to prevent sticking and breaking.
