Preheat the oven to 375 degrees F. Rinse, peel and cut the sweet potatoes into 1 inch cubes.
Place them on a baking sheet lined with parchment paper. Drizzle the olive oil evenly over the top then add the seasonings. Mixand incorporate well.
Roast the sweet potatoes in the oven for 25 minutes, rotating the tray hald way through. Cook until hey are golden brown and fork tender.
Remove from the oven and let them cool for 5 minutes. Sprinkle with chopped cilantro. Serve with your favorite main courses.

Sweet potatoes are easy to prep and store ahead of time. I like to peel at least 5-6 potatoes then cube them all up and store them into my snap ware glass containers. By doing this, it will make it easier for you when you want to cook them and are short on time.
If you have a lot of people to feed or you will go through sweet potatoes fast, I recommend Costco. They have the best prices. However you can find them year round at any grocery store.
