Easy Homemade Fruit Loop Mochi Waffles

Time to take a break from the holiday food and make my Easy Homemade Fruit Loop Mochi Waffles.  These waffles use glutinous rice flour which gives that delicious chewy interior and for fun, I have added colorful and crunchy fruit loops. Grab the fresh fruit, maple syrup (or ice cream) and dig in!

This chewy mochi waffle recipe is inspired by the delicious mochi waffles we enjoy at our favorite waffle shops here in Seattle and by my Ube Mochi Waffles. Just like my Fruity Pebble Waffles, adding the fruit loops was just a way to use up cereal and add some color. My toddler thought this was the best of both worlds when he saw Fruit Loops going into the waffle batter. I hope you enjoy these homemade mochi waffles as much as we do!

Why this recipe works

Ingredients needed for Fruit Loop Mochi Waffles

  • Gluten free all purpose flour. I use 1:1 flour that has xanthan gum already in it. 
  • Nonstick spray. Cooking spray prevents the waffles from sticking.
  • Sweet white rice flour. Also known as glutinous rice flour. I highly recommend is Mochiko flour. You can find the Mochiko Brand in your local Asian grocery stores or in my amazon link. Bob’s Red Mill makes all kinds of gluten free flours and also the sweet rice flour. 
  • Tapioca flour.
  • Baking powder.
  • Fine sea salt.
  • Organic cane sugar.
  • Fruit loops.  
  • Milk. Whole milk, 2% or plant based milk will work. 
  • Eggs.
  • Extra virgin olive oil.
  • Vanilla extract.
  • Maple syrup.

How to make Fruit Loop Mochi Waffles 

Step One: Start with preheating your waffle iron. Place the fruit loops in a zip lock bag and lightly crush them.

Step Two: In a large mixing bowl, add the dry ingredients except the fruit loops. Whisk gently to combine. 

Step Three: In another bowl, add the wet ingredients and stir. Add the wet ingredients to the dry. Gently fold in the fruit loops.

Step Four: Spray the hot waffle iron with non stick spray. Add the waffle batter according to your waffle maker size. Cook for about 3-5 minutes or until light golden brown. When done, let them cool for 5 minutes and then serve with your favorite toppings. Enjoy!

Storing and reheating leftover waffles

Place hot waffles on a cookie sheet to cool. Do not stack them as this can make them soggy.  When they are completely cool, store into an airtight container such as Snapware and store in the freezer for up to 3 months. You can also use a freezer safe zip lock along with parchment paper.

You can reheat frozen waffles by placing in the microwave for about 45 seconds or using a toaster oven. 

Helpful tips

  • This waffle recipe is make ahead friendly. Make a big batch and freeze to enjoy later.
  • Use a 1:1 gluten free flour blend that has xanthan gum already in it.
  • Play around with different cereals. Lucky Charms, Fruity Pebbles or Apple Jacks would be fun.
  • Do not stack the waffles while cooling. This will cause them to be soggy.
  • Avoid overcooking mochi waffles to keep the texture.

FAQ’s

Are mochi waffles gluten free?

Some mochi waffles can be gluten free such as my Ube Mochi Waffles but these waffles are not. If you want them to be gluten free, omit the fruit loops.

What kind of waffle maker should I use?

You can use any kind of waffle iron but the serving size will change. I use a belgian waffle iron so the waffles are much larger. If you want to make them smaller, use less batter when you pour it in. 

What type of flour do I need for mochi waffles?

Sweet rice flour. Mochiko brand is the best and Bob’s Red Mill is good as well.

How do I keep the Fruit Loops from getting soggy?

Add the fruit loops last to the batter to avoid them sitting in the batter for too long.

Ingredients
  

  • 1 cup gluten free all purpose flour *see note on Xanthan Gum
  • 1/2 cup sweet white rice flour
  • 1/2 cup tapioca flour

  • Then add the wet ingredients to the dry. Gently fold in the fruit loops.

  • Let them cool for 5 minutes and then serve with your favorite toppings. Enjoy!

Notes

Notes:
The gluten free flour blend I use already has Xanthan Gum in it. If your blend doesn’t already include it, you will need to add it . Generally it is 1/4 teaspoon of xanthan gum for every 1 cup of flour so for this recipe, use 1/2 teaspoon. Add it to the dry ingredients. 
Be careful not to overcook the waffles as that will mess with the mochi texture.
