Simple Sheet Pan Chicken Sausage with Vegetables. Sheet Pan Honey Salmon with Sweet Potatoes and Broccoli. Roasted Sheet-Pan Tofu and Sweet Potato
1. Start with a preheated oven to 425 degrees F. Line a large sheet pan with parchment paper. 2. Add the veggies. Season with one tablespoon of the avocado oil and the spices. Gently mix with your hands.
3. Add the chicken sausage along with the remaining avocado oil. Coat the sausage with the dijon mustard. 4. Place in the oven for 20-25 minutes. When done, carefully remove from the oven and let it cool for about 5 minutes before serving.
Ingredients: – 1 pound salmon keep whole – 1 large sweet potato peeled and cubed – 2 cups broccoli florets – 2 tablespoon extra virgin olive oil – 1-2 tablespoon ground mustard dijon can be used as a substitute – 1 tablespoon honey – 1 tablespoon granulated garlic powder – kosher salt as needed – black pepper as needed – 1/2 lemon lemon slices – 1-2 teaspoons sesame seeds
– Heat oven to 425 degrees. Line a large sheet pan with parchment paper. – Place the salmon in the center of the prepared sheet pan. Scatter the diced sweet potatoes and broccoli around the fish in a single layer. – Season everything with the garlic powder, salt and pepper. Drizzle the olive oil on top the salmon and the sweet potatoes and broccoli. – In a small bowl, mix the mustard with the honey and brush the salmon gently with the mixture. If you have left over glaze, gently brush some on the sweet potatoes and broccoli. – Place the sliced lemons on top, giving them a little sqeeze. Sprinkle the sesame seeds on top of the salmon. – Bake the salmon for 25 minutes .
Ingredients: – 14 ounces firm tofu drained, excess liquid removed, cubed – 1 tablespoon corn starch – 1 cup sweet potato peeled, cubed – 1 cup broccoli florets – 1/2 cup red onion sliced – 2 tablespoons olive oil - Spices
– Preheat the oven to 400 degrees. Line a sheet pan with parchment paper. Gather the spices into a pinch bowl and whisk to combine. – Drain the tofu. – Cube the tofu up and place on the sheet pan. Toss the tofu with the cornstarch and let sit. – Meanwhile, wash and peel the sweet potato and dice into cubes. Place it on the sheet pan. – Slice the red onion. For the broccoli, cut the florets in half so that they are somewhat uniform in size with the tofu and sweet potato. Add them to the sheet pan. – Drizzle with the olive and then add then evenly distribute the spice mixture over the top. Gently toss the tofu and veggies to combine with the oilve oil and the spices. – Roast for 20 minutes and then give it a stir. Continue to roast for another 15-20 minutes.
Tips for Sheet Pan Meals: Don't overcrowd the sheet pan. This will result in steaming rather than roasting. For easy clean up, use parchment paper.
