Sheet-Pan Salmon with Sweet Potatoes and Broccoli

My Sheet-Pan Honey Salmon with Sweet Potatoes Broccoli is an easy meal that will be on your dinner table in under 30 minutes. This moist and vibrant salmon is loaded with flavor, nutrients and it's great for the entire family!

Ingredients
  

  • 1 pound salmon keep whole
  • 1 large sweet potato peeled and cubed
  • 2 cups broccoli florets
  • 2 tablespoon extra virgin olive oil
  • 1-2 tablespoon ground mustard dijon can be used as a substitute
  • 1 tablespoon honey
  • 1 tablespoon granulated garlic powder
  • kosher salt as needed
  • black pepper as needed
  • 1/2 lemon lemon slices
  • 1-2 teaspoons sesame seeds

Instructions
 

  • Heat oven to 425 degrees F. Line a large sheet pan with parchment paper.
  • Place the salmon in the center of the prepared sheet pan.  Scatter the diced sweet potatoes and broccoli around the fish in a single layer.
  • Season everything with the garlic powder, salt and pepper. Drizzle the olive oil on top the salmon and the sweet potatoes and broccoli.
  • In a small bowl, mix the mustard with the honey and brush the salmon gently with the mixture. If you have left over glaze, gently brush some on the sweet potatoes and broccoli.
  • Place the sliced lemons on top, giving them a little sqeeze. Sprinkle the sesame seeds on top of the salmon.
  • Bake the salmon for 25 minutes or until salmon is opaque and sweet potatoes are tender.

Notes

NOTES: 
Keep the salmon whole on the sheet pan. This will ensure the salmon along with the sweet potatoes and broccoli will cook evenly. 
Don't overcrowd the sheet pan. 
Serving suggestions: Serve as is or on top of a bed fresh rice or quinoa, salad or along side your favorite veggies. 
  • Store: Store any leftover salmon in an airtight container and refrigerate for up to 2 days. 
  • Reheat: Reheat in the microwave for about 1-2 minutes. 
  • Freeze: I don't recommend freezing this dish.
