Equipment

  • large non stick pan

Ingredients

  • 4 tablespoons unsalted butter
  • 8 slices whole wheat bread
  • 1/2 cup reduced fat milk 2%
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/4 teaspoon nutmeg
  • 1/4 cup fruit jam strawberry or your choice of flavor
  • maple syrup optional garnish
  • 8 fresh strawberries optional garnish

Instructions

  • In a large bowl, mix the eggs and milk. Add in the spices gently combine.
  • Using 2 slices of bread, spread the jam on one side of each piece and then join the bread together like a sandwich.
  • Dip the bread into egg milk mixture and evenly coat.
  • Melt 1 tablespoon of butter into a large skillet over medium low heat. Add the sandwich to the skillet and let it cook until golden, about 3 minutes. Then gently flip over to cook the other side.
  • Remove and let it cool on a cooling rack or sheet pan for a few minutes.
  • Serve immediately with maple syrup or other garnishes such as fresh fruit, whip cream, powdered sugar or additional butter.

Notes

Notes:
  • Soak one sandwich at a time and put it directly into egg milk mixture to avoid making it too soggy.
  • Use a shallow bowl like a pie pan as this it easier for the bread to be soaked.
  • You can make this recipe without adding the jam or stuffing it. When I recipe tested, my family and I liked the texture better of having the bread sandwiched as it resembled the thickness of traditional brioche.
  • I sometimes add a little bit of sugar to my egg and milk mixture but since the jam is sweet, I didn't think the extra sugar was needed.
  • I didn't use vanilla extract in this recipe but you can always add it in to the milk and egg mixture.
  • This recipe can be used with regular white sandwich or whole grain bread.
  • Watch the butter carefully and don't let it burn.
  • Use a griddle or a non stick pan.
  • Use non stick cooking spray in replace of butter.
  • The best bread for french toast is typically stale bread or heartier breads.  While whole wheat bread can be more of a soft bread, placing the bread in the fridge for a couple of days helps with the texture.
Storing: Store leftovers in an airtight container in the fridge for up to 2 days. You can freeze french toast by placing the sandwiches on a sheet pan to cool then storing a freezer safe container for up to 3 months.
Reheating: Reheat in the microwave for about 1 minute. Or warm in an oven or toaster oven to get some texture.
