Preheat the oven to 375 degrees F. Place the salmon on a sheet pan lined with parchment paper.
Start with seasoning it with salt and pepper. Then add the minced garlic.
Add the chopped rosemary and drizzle the olive oil over the top. With your hands, rub the oil and herbs and spices into the salmon.
Squeeze the lemon slices over the salmon and then spread them over the top. Drizzle the lavender honey over the top.
Place the salmon in the oven for about 15 minutes or until the salmon is opaque.

Notes: Helpful Tips: If you don’t have lavender honey, regular honey is fine.Any cut of salmon works. I prefer Atlantic salmon because it is thicker and also it is a reasonable price. The serving size is using a store cut filet that is about .80 of a pound. You are working with 2 very strong flavors, rosemary and lavender. A ¼ teaspoon of lavender syrup may not seem like a lot but it is definitely enough! Storage and reheating: Store in an airtight container in the fridge for up to 2 days. Reheat in the microwave for 60-90 seconds.
