My refreshing and easy Fruit Pizza is a must try! Made with a flaky puff pastry and fresh summer fruits along with tangy lemon curd and sweet strawberry jam. This quick dairy-free fruit pizza makes the perfect summertime treat.
Remove puff pastry from the package and unroll onto a large baking sheet.
With a paring knife, gently cut into the dough to divide and make 9 rectangles.Then inside the rectangle, cut another rectangle to form a crust to the individual slice. (see picture above in the post for detail)
Bake for 12-15 minutes. When remove from the oven and set aside.
On a cutting board, prepare the fruit by slicing. Please note, the blackberries I had were quite large. I sliced them in half, but if yours are smaller or regular size, there is no need to slice them.
To assemble to the Fruit Pizza, start by spreading about 1 to 1 1/2 tablespoons of the strawberry jam in each middle rectangle.
Then repeat with the lemon curd using the same amounts.
Divide the fruit evenly among the crust, with a couple of slices of fruit to each one and scattering the blueberries.
