Easy Baked Italian Chicken Thighs are great for busy weeknights, meal prep and last minute family dinners. Juicy chicken thighs are roasted with my special zesty italian seasoning blend and sweet red bell peppers. This easy 5 ingredient dish can be paired with your favorite pasta or keep it simple with roasted potatoes or a green salad!
Preheat the oven to 375 degrees F. Cover a large sheet pan with parchment paper. Add the cut red peppers, red onion and the boneless chicken thighs to the sheet pan.
Sprinkle the zesty Italian seasoning evenly over the chicken. Drizzle the olive oil and gently mix to combine well.
Place chicken in the oven for 22-25 minutes or until internal temperature reaches 165 degrees F. When done, let it cool for 2-3 minutes and then serve with your favorite pasta, rice or salad.

Notes:Storing and reheating:Store any leftover chicken thighs in an airtight container in the fridge for up to 2-3 days. Reheat in the microwave for 60 seconds. Helpful tips:Boneless skinless thighs are best for this recipe. Bone in chicken thighs will work but you will need to increase the cooking time to 35-40 minutes. There is kosher salt in my seasoning mix already so there is no need to add more.Add paprika for additional flavor if using Italian seasoning.Use a meat thermometer to check the temperature to ensure the chicken is cooked all the way.
