This delicious and fun Fruity Pebble Waffle will be perfect for the whole family! Colorful crunch spilled through out and the bonus is that this is Gluten Free!
1/2cup organic cane sugaror regular white sugar would work
1/2cupfruity pebblescereal, plus more for topping (optional)
1cup milk, 2%
2tablespoons olive oil extra virgin
2largeeggs
1/2 teaspoon pure vanilla extract

Preheat the waffle maker on medium low heat. In a large mixing bowl, add the gluten free flour and the corn meal. Then add the baking soda, salt, and cane sugar.
Give it a quick stir with a whisk and then add the Fruity Pebbles. Gently combine.
In a medium mixing bowl, add the wet ingredients. Gently stir and then add to the dry ingredients.
When the waffle maker is ready, give it a quick spray with cooking spray and add about 1/3 cup of the batter. Cook the waffle until done. The waffle should be a nice golden brown/yellow.
Serve immediately with a drizzle of syrup and fresh fruit.

Notes:Helpful tips:When making waffles, you want to keep the texture. The refrigerator will ruin that therefore you want to freeze them. To properly store leftovers or save for meal preps, as you make the waffles, do not stack them.Have a sheet pan ready with some parchment paper on top, and place and space the waffles out. Let them cool completely and then you want to store them in freezer safe zip lock bags. I normally use the smaller sandwich bags and then I put a 1/2 waffle in it. This is good for when your family wants smaller portions. Also you can wrap them in parchment (also if you are stacking them in the bag) and then place them in the freezer bag, but this isn’t necessary especially if you plan to consume them within a couple of weeks. Another great way to freeze waffles is to use a glass food storage container, such as Snapware . You can line it with parchment paper and layer in 2 waffles. I like the 4 cup square container as it holds the waffles nicely. They will remain good in the freezer for 3 months.Storing leftovers:Let the waffles cool completely on a wire rack or sheet pan. Wrap the waffles in parchment paper. Then place the waffles in a freezer safe container and freeze for up to 3 months. A large freezer bag also works. Reheat in the microwave for up to 45 seconds. Pro tip: Make mini waffles and store them in smaller individual sandwich bags in the freezer for easy meal prep! Reheating:You want to use the microwave and reheat for 30-60 seconds. You can also use your toaster oven or a regular oven at 350 degrees for about 10 minutes.
