30 Minute Sugar Free Sloppy Joe's

Ingredients
  

  • 1 pound lean ground beef I used 90/10
  • 1-2 tablespoon olive oil
  • 1/2 small sweet onion chopped
  • 1 medium red bell pepper chopped
  • 1 medium green bell pepper chopped
  • 4 cloves garlic minced
  • 1/2 cup organic ketchup plus more if needed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup optional
  • 2 teaspoon paprika
  • 2 teaspoon dried oregano
  • 3/4 teaspoon ground thyme
  • salt as needed

Instructions
 

  • Heat the oil in a large skillet over medium-low heat.
  • Add the ground beef and let it cook for 5 minutes. Add a pinch of salt.
  • Add the bell peppers, garlic and onion. Turn heat down to low. Stir well and let it cook for an additional 15 minutes.
  • Add the spices and give it a stir. Then add the ketchup and apple cider vinegar. Continue to simmer for 7 minutes then remove from the heat and stir in the maple syrup if using.
  • Serve with your favorite side such as roasted vegetables or buns.

Kitchen Tips:
To quickly get your veggies and garlic chopped, place them in a food a processor on the "chop" setting and pulse until chopped, about 30 seconds or so. 
Chopping the veggies in the food processor will really release their juices and add that extra oomph to the Sloppy Joe's.
I like to use lean ground beef such as 90/10 or 93/7. 
Organic ketchup keeps this recipe clean and free of added sugars or unnecessary ingredients. 
Use 1/2 cup ketchup for less sauciness or add more to your liking.
Storage and reheating:
If serving with bread or buns,  store the sloppy Joe sauce separately in an airtight container in the fridge for up to 3 days. 
Reheat the sloppy joes meat mixture in microwave on high for about 1-2 minutes or reheat on the stove top.
