Tender steak bites are amazing on top of a greek salad, zucchini noodles, crusty bread or with rice. The best part is that this Mediterranean steak bites recipe is a quick dinner that uses simple ingredients. It’s a wonderful dish for busy weeknights!

Reasons you will love this dish:

Juicy steak bites are perfect for any night of the week. Mediterranean flavors compliment beef. This high protein dish good for the whole family and great for meal prep.

Ingredients: – Top sirloin steak.  – Extra virgin olive oil. Vegetable oil or avocado oil will work too. – Garlic cloves. You use garlic for the steak and also for the sauce. – Mint. – Fresh parsley. – Kosher salt. – Black pepper. – Sour cream. This is the base of the sauce. – Mayo. This give the sauce a nice tang and texture. – Lemon.

Make the sauce first by adding the sour cream, mayo, garlic into a small bowl ( or food processor if the garlic is whole). Whisk to combine. Then add a couple of squeezes of lemon juice and salt. Taste test to see if you need more salt or lemon. Then stir in the parsley. Set the bowl inside the fridge until ready to use

2. Then start with cutting the whole steak into cubes. This will ensure even cooking time. 3. Using a large sauté pan or cast iron skillet, heat the oil over medium heat. Then turn the heat down to medium-low and add the steak cubes.

4. Season with the salt and pepper and add in the crushed garlic. Pro tip: This dish will cook fast (under 10 minutes), so don’t leave it unattended. 5. Cook each side for about 4-5 minutes.

6. Stir in the chopped herbs. Remove from the heat and set aside. Let cool for a few minutes and then serve these tasty steak bites with a dollop of the garlic sauce. 7. Store any leftover steak bites in an airtight container for up to 3 days in the fridge. Store the garlic sauce seperately.

Tips: Beef tips cook fast so you want to be careful not to overcook them as they seem tough and dried out. A great way to check for accuracy is to use a meat thermometer. The sauce is more delicious if made the day before. The flavors settle in and it tastes way better the next day.
