Fruit Loop Mochi Waffles

Spring is almost here and it's time to  make my Easy Homemade Fruit Loop Mochi Waffles.  These waffles use glutinous rice flour which gives that delicious chewy interior and for fun, I have added colorful and crunchy fruit loops. Grab the fresh fruit, maple syrup (or ice cream) and dig in!

– Homemade waffles are easy to make. – Chewy mochi waffles are always a delicious treat. – This is guaranteed to be a hit with your kids!

Ingredients:Gluten free all purpose flour.  – Nonstick spray. Sweet white rice flour. Tapioca flour.Baking powder.Fine sea salt.Organic cane sugar.Fruit loops. – Milk.  – Eggs.Extra virgin olive oil.Vanilla extract.Maple syrup.

1. Start with preheating your waffle iron. Place the fruit loops in a zip lock bag and lightly crush them. 2. In a large mixing bowl, add the dry ingredients except the fruit loops. Whisk gently to combine.

3. Then in another separate bowl, add the wet ingredients and stir. 4. Add the wet ingredients to the dry. Gently fold in the fruit loops.

5. Spray the hot waffle iron with non stick spray. Add the waffle batter according to your waffle maker size. Cook for about 3-5 minutes or until light golden brown. 6. When done, let them cool for 5 minutes and then serve with your favorite toppings. Enjoy!

Tips: Place hot waffles on a cookie sheet to cool. Do not stack them as this can make them soggy.  When they are completely cool, store into an airtight container such as Snapware and store in the freezer for up to 3 months. You can also use a freezer safe zip lock along with parchment paper. Reheat frozen waffles by placing in the microwave for about 45 seconds or using a toaster oven.
