Use 93/7 lean ground turkey. The fat from dark meat gives a nice texture and helps with moisture and flavor. Using 1% fat will result in a dryer texture. Don’t over mix the mixture. Adding salt in layers is recommended. Whether you are using feta or some other kind of cheese, there is always lots of salt already in the cheeses.
