Here's what you need

Ingredients  – large eggs – heavy cream – unsalted butter – lemon infused goat cheese – red onion – medium zucchini, keep the skin on – salt and pepper

Step 1

Start with preheating the oven to 350 degrees. Grease your pie plate or pie pan with the butter. In a large bowl, add the eggs and the heavy cream. Add a bit of salt and pepper. Whisk to combine.

Step 2

In a food processor, add the zucchini and on chop mode, pulse for about 20-30 seconds. Place the zucchini on a sheet tray or cutting board lined with paper towels. Remove excess liquid by placing paper towels on top and press down to release the moisture.

Step 3

Add half of sliced onions and zucchini to the pie pan. Then pour in half of the egg mixture. Layer in half of the goat cheese. Then add remaning of the zucchini.

Step 4

Pour the rest of the egg on top and finish layering in the remaining goat cheese and red onion into the zucchini mixture. Place the pie dish into the oven and bake 45-60 minutes or until the top of the crustless quiche is golden.
