Jicama Wrapped Beef Tacos with Anjou Pears

Ingredients
  

  • 1 package jicama wraps Trader Joe's
  • 1 tablespoon olive oil extra virgin
  • 1 pound ground beef 90/10
  • 1 small white onion diced
  • 1 tablespoon taco seasoning flavor god brand
  • 1 teaspoon garlic powder
  • 2 tablespoon cilantro chopped, fresh
  • 1 medium anjou pear sliced
  • 1/2 cup brown rice cooked
  • 3 radishes optional

Instructions
 

  • In a large pan, heat the oil on low. Add the beef and let it cook for about 5 minutes. Then add the diced onion.
  • Gently mix it up and add the seasonings. Continue to cook for another 5-7 minutes. When meat is almost done, stir in the fresh cilantro and brown rice.  Remove from the heat.
  • The jicama wraps do not need any preparing. Take them out the wrapper and use 1-2 wraps per taco. Fill with the meat and rice mixture, then top with the sliced pears and radishes.

Notes

Adding the brown rice is optional. Since most of my recipes are made with what I have on hand- the brown rice needed to get used up and this was the perfect way to use it. If you don’t have brown rice, the tacos will be great without or you can use whichever rice you like.
You can use whichever taco seasoning you like if you don't have Flavor God.
I didn’t add additional salt to this recipe as I thought the spice blend was good enough but I really like a little salt on my radishes.. you can add separately if you wish.
