Quick and Easy Roasted Murasaki Sweet Potato Salad

Indulge in the perfect blend with my Roasted Murasaki Sweet Potato Salad. A delightful dish of tender, roasted Murasaki sweet potatoes, crisp broccoli slaw and a delicious vegan dressing. Wholesome goodness in every bite!

Ingredients
  

  • 3 murasaki potatoes washed, skin on
  • 1 tablespoon olive oil extra virgin
  • salt dash
  • pepper dash
  • 1 teaspoon granulated garlic
  • 2 cups broccoli slaw store bought
  • 1/4 cup dried cranberries
  • 3 tablespoons vegan dressing
  • 1/2 teaspoon everything but the bagel seasoning

Instructions
 

  • Preheat the oven to 400 degrees.
  • Wash the potatoes and cut into slices, about 1/2 inch thick.
  • Place the murasaki sweet potatoes on the sheet pan lined with parchment paper. Season with olive oil and the salt, pepper and the garlic powder. Toss to combine.
  • Put in the oven for 17-20 minutes. Roast until fork tender and golden in color.
  • When done, carefully remove from the oven and set aside to cool.
  • In a large bowl, combine the broccoli slaw with the dressing and top with the cranberries.
  • Then add the sweet potatoes on top. Season with Everything Bagel Seasoning.
  • Serve with your favorite protein or serve as a side dish. Enjoy!

Notes

NOTES:
 
All of the items should be at Trader Joe's but if for some reason you can't locate them, here are some good substitutions from a regular grocery store:
    • Starting off with our main star, the Murasaki sweet potato- a good substitute is the white sweet potato. They have similiar taste and texture.
    • Broccoli slaw- you can use any broccoli slaw that consists of broccoli and shredded carrots. Another option is to buy a bag of shedded carrots and shred your own raw broccoli.
    • Dried cranberries- if you do not want to use dry fruit, a delicious substitute is satsumas. 2 or 3 is good and they should be sweet enough.
    • Vegan dill dressing- this item is a Trader Joe's exclusive. It is located in the refrigerated section. For a substitute, you want to use another fresh vegan dressing. If you need to get bottled, Primal Kitchen makes a vegan ranch. You can use that and add some fresh dill.
    • Everything but the bagel seasoning- this is another Trader Joe's item however I have seen other brands make their own version. This seasoning is not needed (and is totally optional) in order to make this salad. I have made this a ton of times without it. It happens to enhance the flavor though.
Since the potatoes are cut small, they will roast much faster in the oven. 
Peeling the potatoes is optional. You can save yourself some work and leave the skin on. 
To store this salad, use an airtight container and place in the fridge for 2-3 days. For better results, try to store salad dry (without putting the dressing on) so that the slaw and potatoes do not get soggy.
