Fruit Pizza Easter Dessert

Let's learn to make a healthy dessert today: Fruit Pizza.

You're going to keep this recipe simple by using store bought puff pastry.  This can also be made on a sugar cookie dough.

This Fruit Pizza has something special. It's made with lemon curd and strawberry jam instead of cream cheese. Let's get started...

Ingredients

– 1 package puff pastry – lemon curd store bought or homemade – strawberry jam – kiwi  –  blueberries  –  strawberries  –  blackberries

STep one

Preheat the oven. With a paring knife, gently cut into the dough to divide and make 9 rectangles. Then inside the rectangle, cut another rectangle to form a crust to the individual slice.

Bake for 12-15 minutes. When remove from the oven and set aside. On a cutting board, prepare the fruit by slicing. Please note, the blackberries I had were quite large. I sliced them in half, but if yours are smaller or regular size, there is no need to slice them.

To assemble to the Fruit Pizza, start by spreading about 1 to 1 1/2 tablespoons of the strawberry jam in each middle rectangle. Then repeat with the lemon curd using the same amounts. Divide the fruit evenly among the crust, with a couple of slices of fruit to each one and scattering the blueberries.
