Beef Bulgogi Bowls

My Beef Bulgogi is a twist to a classic Korean dish featuring shaved beef, coconut aminos and chili sesame oil. This dish is gluten free, a family favorite and is an easy weeknight meal!

- 1 pound shaved beef
- 2-3 tablespoons coconut aminos
- 1/4 cup brown sugar
- 1-2 tablespoons chili sesame oil
- 1 bunch green onion sliced
- 1/2 sweet onion sliced
- 2 tablespoons garlic minced
- 2 tablespoons ginger minced
- 1 tablespoon vegetable oil
- 4 large eggs cooked over easy
- 2 cups brown jasmine rice or rice of your choice
Combine all ingredients in a large bowl and marinate for 20 minutes.
In a large non stick pan on low heat, cook the meat for 10-15 min, stirring every couple of minutes.
When the meat is done, set aside and cook the eggs over easy by heating a non stick pan on low with a tablespoon or so of olive oil or non stick spray. Cook the eggs until the whites set (about 2 min) and then carefully flip.
When the eggs are done, serve over rice and meat.

The eggs can be prepared to your liking but I highly suggest the over easy method because the yolk and the beef make a great team to your taste buds!
Brown jasmine rice or regular white jasmine is the da’ best and is highly recommended.
This tastes even better the next day. 😋
