1/2cupItalian truffle cheeseor any shredded soft cheese such as mozzarella, pepper jack or provolone
1/4cupfresh basil1 .5 ounce pack
1/4teaspoonground thyme
1teaspoonpaprika
1 teaspoonoregano
1teaspoondried parsley
1/2teaspoonkosher saltplus more if needed
olive oilto coat pan
fresh parsleyoptional, garnish
Instructions
Preheat the oven at 350 degrees.
In a large mixing bowl, add the bison along with the bread crumbs, 1/2 cup of ketchup, onions, garlic, egg and egg white, seasonings, basil and cheese.
Mix together with your hands and season with more salt if you desire.
Coat the meatloaf pan with the olive oil.
Take the meat and shape into the meatloaf pan.
Put the meatloaf on top of a sheet pan and place in the oven to bake for about 1 hour. Half way through cooking, add the additional ketchup on top.
Bison should reach 160 degrees internal temperature.
When done, carefully remove from the oven and sprinkle top of loaf with fresh parsley if desired. Let the meatloaf cool before cutting into it.
For leftovers, slice meatloaf and store into an airtight container.

Please Note: Placing the meatloaf pan on top of a sheet pan will help any juices that may spill over.*I use a double oven and baked this on the bottom half and the very lowest rack and it took 1 hour and 15 minutes to cook.* Italian Truffle Cheese can be found at Trader Joe's and can be substituted with any kind of soft shreddable cheese like mozzarella, pepper jack or provolone.Organic ketchup keeps the recipe clean however it substituted with regular ketchup.
