Fruity Pebbles Waffles with Ube Syrup

This delicious and fun Fruity Pebble Waffle will be perfect for the whole family! Colorful crunch spilled through out and the bonus is that this is Gluten Free!

Equipment

  • 1 large mixing bowl for the dry ingredients
  • 1 medium mixing bowl for the wet ingredients
  • waffle maker
  • non stick baking spray
  • tongs
  • sheet pan

Ingredients
  

  • 1 cup gluten free flour all purpose
  • 1 cup ground cornmeal
  • 1/2 teaspoon fine sea salt
  • 2 teaspoons baking powder
  • 1/2 cup organic cane sugar or regular white sugar would work
  • 1/2 cup fruity pebbles cereal, plus more for topping (optional)
  • 1 cup milk, 2%
  • 2 tablespoons olive oil extra virgin
  • 2 large eggs
  • 1/2 teaspoon pure vanilla extract
  • ube spread from Trader Joe's -optional
  • maple syrup as needed

Instructions
 

  • Preheat the waffle maker on medium low heat.
    In a large mixing bowl, add the gluten free flour and the corn meal.
  • Then add the baking soda, salt, and cane sugar.
  • Give it a quick stir with a whisk and then add the fruity pebbles. Gently combine.
  • In a medium mixing bowl, add the wet ingredients.
  • Gently stir and add to the dry ingredients.
  • When the waffle maker is ready, give it a quick spray and carefully add about 1/3 cup of the batter.
    Please Note: I use a Belgium Waffle Maker so it can hold a little more batter than the smaller waffle makers. Adjust accordingly.
  • Cook the waffle until done. The waffle should be a nice golden yellow.
  • Serve immediately with a drizzle of syrup and fresh fruit.
  • Enjoy!

Notes

Notes:
If using the ube spread, mix 1 teaspoon of ube spread to 1 tablespoon of the maple syrup. You want the consistency to not be too thick. Another option is to spread the ube spread on the waffle directly then drizzle the maple syrup. Either way, you'll love it :) 
Helpful tips:
When making waffles, you want to keep the texture. The refrigerator will ruin that therefore you want to freeze them. To properly store leftovers or save for meal preps, as you make the waffles, do not stack them.
Have a sheet pan ready with some parchment paper on top, and place and space the waffles out. Let them cool completely and then you want to store them in freezer safe zip lock bags. I normally use the smaller sandwich bags and then I put a 1/2 waffle in it. This is good for when your family wants smaller portions. Also you can wrap them in parchment (also if you are stacking them in the bag) and then place them in the freezer bag, but this isn’t necessary especially if you plan to consume them within a couple of weeks. 
Another great way to freeze waffles is to use a glass food storage container, such as Snapware . You can line it with parchment paper and layer in 2 waffles. I like the 4 cup square container as it holds the waffles nicely. 
They will remain good in the freezer for 3 months.
Reheating:
You want to use the microwave and reheat for 30-60 seconds. You can also use your toaster oven or a regular oven at 350 degrees for about 10 minutes.
