Butternut Squash with Turkey Tacos

Here is a simple and healthy recipe for Roasted Butternut Squash and Ground Turkey Tacos.  You can omit the ground turkey if you want to keep these vegetarian.

Let's start with ingredients

Prep Time:10 Minutes

Cook Time: 25 Minutes

Ingredients

ground turkey yellow onion medium  olive oil extra virgin butternut squash corn tortillas spices

On a large sheet pan lined with parchment paper, toss the butternut squash with olive oil and the seasoning spices. Place it in the oven and bake for 20 minutes. Squash should be golden and tender when done.

Step 1

In a large saute pan over medium/low heat, add the additional olive oil. When the pan is ready, add the ground turkey.

Step 2

Let the turkey cook for 5 minutes. Turn the heat to low. Then add the onions and the seasonings. Continue to let it cook for about 20 minutes or until the turkey has reached 165 degrees.

Step 3
