Steak Bites with Yukon and Cauliflower Mash 

Warning : You may want to open a nice bottle of wine with this dish! Steak Bites with Yukon and Cauliflower Mash is your next fancy weeknight meal!

The first time I had Cauliflower Mash was at a restaurant. It was so delicious- I didn’t realize I wasn’t eating regular mash. I read on the menu that they mixed it with potatoes though which is why it has the same consistency.

Steak Bites with Yukon and Cauliflower Mash Preparation

My Steak Bites with Yukon and Cauliflower Mash recipe is really simple and fast to make. In this dish, I used Top Sirloin for the Steak Bites, however you can use Filet Mignon or Flank. You’re probably wondering why I am cooking a steak but using plant based milk and vegan butter in my mash? Good Question!

Though I still eat dairy in moderation, I try to limit it as much as possible because sometimes cream and milk don’t agree with me. 🙂 However this mash recipe is very creamy and kind of McDreamy. {yes, I just used a Grey’s Anatomy rhyme LOL}

Other Variations

I like to use Yukon Gold potatoes when I make mash potatoes. But you can substitute with russets. The cauliflower only has to cook for a few minutes as it’s so delicate , it can be thrown in the pot the last 5 minutes of cooking the potatoes. Gravy is totally optional – I like to use the pan juices from the steak to pour over the mash.

For my steaks, when I’m keeping it simple and I don’t want to put any thought into the seasonings, I use Flavor God. {I’m not affiliated with them, I just really enjoy their spice blends} The particular one I use most often is their Everything Seasoning. If you don’t have this spice blend, I suggest creating your own steak seasoning with a mixture of : onion powder, granulated garlic, coriander, cumin, sea salt, dried basil leaves, some kind of chili pepper, paprika and black pepper. The use of the fresh mint and italian parsley in this recipe will bring these flavors alive!!!

You can’t enjoy these tender steak bites without pouring yourself a beautiful bottle of red wine.

Steak Bites with Yukon and Cauliflower Mash

Seared juicy steak bites combined with a creamy dairy-free Yukon potato and cauliflower mash. Someone grab a bottle of wine! A quick and simple meal that may look fancy but is ready in under 30 minutes.

Ingredients
  

  • 1.5 pound 1.5 pound of top sirloin cubed
  • 2 tbsp olive oil
  • 1-2 tbsp everything seasoning flavor god
  • handful mint chopped
  • handful italian parsley chopped
  • kosher salt pinch as needed

Yukon and Cauliflower Mash

  • 2 handfuls cauliflower florets
  • 7 medium Yukon gold potatoes quartered
  • 1/4 cup unsweetened almond milk
  • 3 tbsp vegan butter Earths Balance or your favorite brand
  • kosher salt and black pepper as needed

Instructions
 

Steak Bites

  • In a large non stick skillet, heat the olive oil on med/low heat and add the cubed top sirloin.
  • Cook for 2 minutes and then add the seasoning. Let the meat cook for about another 5 min.
  • Then add the chopped mint and parsley and remove from the heat. Sprinkle lightly with a touch of kosher salt.

Yukon and Cauliflower Mash

  • Rinse and quarter the potatoes.
  • Put them into a large pot and fill it with cold water. Bring it to a boil and then turn down to medium heat and continue to cook for about 10-12 min or when a fork can pierce the potato.
  • Add the cauliflower florets and cook for another 5 minutes. Then carefully remove from the burner and drain into a strainer.
  • Put the cooked potatoes and cauliflower back into the hot pot and add the almond milk and vegan butter. With a big wooden spoon or masher, mash the potatoes  and cauliflower and continue to stir to combine well. Season to your liking with kosher salt.

Notes

Some tips: You can use regular butter and milk if you prefer. If you do not have Flavor God seasoning, then you can use your favorite seasoning or a seasoning salt then omit the additional kosher salt. This dish is perfect for a tapas theme, appetizer or main course.
