Simple Sheet-Pan Chicken Sausage and Veggies

There’s nothing better than a hassle-free meal done in under 30 minutes. My Simple Sheet-Pan Chicken Sausage and Veggies is wonderful for the whole family. A mix of fresh, seasonal vegetables and savory chicken sausage is oven-roasted for an easy and nourishing meal.

Similar to my Sheet Pan Za’atar Chicken and Sheet Pan Salmon with Sweet Potatoes and Broccoli, who doesn’t love simple meals?  Trying to juggle between getting your kids places, doctor appointments and work etc, you need an easy weeknight dinner to fall back on. I have been making this recipe ( and other variations of it) for years and it has been a savior. Also it’s a great way to use up extra veggies leftover in the week.

Ingredients you’ll need for this Sheet Pan Chicken Sausage Recipe

  • Chicken Sausage Links. Any brand works. I like to use Sabatino’s Paleo chicken sausage from Costco or Adells. 
  • Red Bell Peppers. Loaded with vitamin C and deee-lish! Orange bell peppers or yellow work too. 
  • Brussels Sprouts. Brussels is my fave and they have plenty of fiber! Sub this out for broccoli or cauliflower if you like those veggies more. 
  • Butternut Squash. Just like in my Butternut Squash and Black Bean Enchiladas and Butternut Squash and Carrot Soup, it adds natural sweetness. Squash is also packed with potassium. Potatoes or root vegetables work too. 
  • Red Onion.
  • Avocado Oil. Don’t worry if you don’t have avocado oil, olive oil is perfect to use too. Cooking with avocado oil is delicious. You can bake with it also like with  my Strawberry Zucchini Bread or make Avocado Oil Pesto.
  • Whole Grain Dijon Mustard. This gives the chicken sausage some pizzazz.
  • Spices: Dried oregano, paprika, granulated garlic and kosher salt.   

How to make Sheet-Pan Chicken Sausage and Veggies

Step One: Start with a preheated oven to 425 degrees F. Line a large sheet pan with parchment paper. Add the veggies. Season with one tablespoon of the avocado oil and the spices. Gently mix with your hands. 

Step Two:  Slice the chicken sausage and add it to the pan along with the remaining avocado oil. Coat the sausage with the dijon mustard.

Step Three:  Place in the oven for 20-25 minutes. When done, carefully remove from the oven and let it cool for about 5 minutes before serving.

Pro tip: Make sure to have the veggies spread out and not too crowded on the pan. Overcrowding will cause them to steam and not roast. Use 2 sheet pans if needed.

Storing instructions and reheating

Store any leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave in a microwave safe bowl for about 90 seconds. 

Helpful tips for Sheet-Pan Chicken Sausage and Veggies

  • Use a large baking sheet: Be sure to spread the chicken sausage and the vegetables in a single layer. This will ensure that everything will roast and not steam. 
  • Line the pan for easy clean-up:Use parchment paper or aluminum foil for easy cleanup. 
  • Cut everything in similar sizes: Try to cut the veggies and sausage in medium uniform size. Small pieces can burn and uneven pieces will result in a different cooking time. 
  • Meal prep ahead: Chop your veggies and sausage in advance so dinner can come together quickly. 
  • Family-friendly serving idea: We keep it simple and serve it ketchup. It’s our favorite dip!
  • Check your sausage type: Many chicken sausages are precooked. If you are going to use raw sausage, that will increase the cooking time. I have not recipe tested with raw, so be sure to follow the instructions on the package to ensure it’s cooked to the proper doneness. 

Serving suggestions  

A sheet pan meal with chicken sausage makes a quick and healthy option for busy weeknights and the variations are endless. Here are a few ways to change it up:

  • Cooking oils: Using olive oil is a great alternative to avocado oil. 
  • Extra flavor: This easy sheet pan recipe has plenty of flavor but you can add a little parmesan cheese , red pepper flakes over the top for a little kick or even a little maple syrup for a sweeter touch. 
  • Serving ideas:Serve this straight off the pan or on top of wild rice,brown rice, Garlic Turmeric Rice or jasmine rice. It would also pair well with Rosemary Sweet Potato Mash, Whole30 Mashed Potatoes or Cumin Sweet Potatoes.
  • Seasoning swaps: If you don’t have all the spices, use Italian seasoning, garlic powder, fresh garlic, chili powder.
  • Protein options: Paleo chicken sausage, chicken and apple sausage, italian sausage and turkey sausage all work beautifully here. If following Whole30 or Paleo, be sure to check if your sausage is compliant. 
  •  Vegetable swaps:Use what you have on hand. This chicken sausage and vegetable sheet pan dinner pairs great with sweet potato, regular potato, cherry tomatoes, carrots, peppers, green beans and onions.
