Easy Homemade Fruit Loop Mochi Waffles

Time to take a break from the holiday food and make my Easy Homemade Fruit Loop Mochi Waffles.  These waffles use glutinous rice flour which gives that delicious chewy interior and for fun, I have added colorful and crunchy fruit loops. Grab the fresh fruit, maple syrup (or ice cream) and dig in!

Ingredients needed for Fruit Loop Mochi Waffles

  • Gluten free all purpose flour. I use 1:1 flour that has xanthan gum already in it. 
  • Nonstick spray. Cooking spray prevents the waffles from sticking.
  • Sweet white rice flour. Also known as glutinous rice flour. I highly recommend is Mochiko flour. You can find the Mochiko Brand in your local Asian grocery stores or in my amazon link. Bob’s Red Mill makes all kinds of gluten free flours and also the sweet rice flour. 
  • Tapioca flour.
  • Baking powder.
  • Fine sea salt.
  • Organic cane sugar.
  • Fruit loops.  
  • Milk. Whole milk, 2% or plant based milk will work. 
  • Eggs.
  • Extra virgin olive oil.
  • Vanilla extract.
  • Maple syrup.

How to make fruit loop mochi waffles 

1. Start with preheating your waffle iron. Place the fruit loops in a zip lock bag and lightly crush them.

2. In a large mixing bowl, add the dry ingredients except the fruit loops. Whisk gently to combine. 

3. Then in another separate bowl, add the wet ingredients and stir.

4. Add the wet ingredients to the dry. Gently fold in the fruit loops.

5. Spray the hot waffle iron with non stick spray. Add the waffle batter according to your waffle maker size. Cook for about 3-5 minutes or until light golden brown. 

6. When done, let them cool for 5 minutes and then serve with your favorite toppings. Enjoy!

Storing and reheating leftover waffles

Place hot waffles on a cookie sheet to cool. Do not stack them as this can make them soggy.  When they are completely cool, store into an airtight container such as Snapware and store in the freezer for up to 3 months. Uou can also use a freezer safe zip lock along with parchment paper.

You can reheat frozen waffles by placing in the microwave for about 45 seconds or using a toaster oven. 

Are Mochi Waffles Gluten Free

Some mochi waffles can be gluten free such as my Ube Waffles but these waffles are not. If you want them to be gluten free, omit the fruit loops. 

What Kind of Waffle Maker Should I Use

You can use any kind of waffle iron but the serving size will change. I use a belgian waffle iron so the waffles are much larger. If you want to make them smaller, use less batter when you pour it in. 

Serving suggestions for Fruit Loop Mochi Waffles

I suggest the following toppings:

  • Syrup.
  • Agave syrup.
  • Fresh fruits.
  • More crushed fruit loops.
  • Lemon curd.
  • Vanilla greek yogurt.
  • Whipped cream.
  • Scoop of ice cream if you want to eat this as a dessert.

This chewy mochi waffle recipe is inspired by the delicious mochi waffles we enjoy at our favorite waffle shops here in Seattle. Adding the fruit loops was just a way to use up cereal and add some color. My toddler thought this was the best of both worlds when he saw Fruit Loops going into the waffle batter. Ingredients
  

  • 1 cup gluten free all purpose flour *see note on Xanthan Gum
  • 1/2 cup sweet white rice flour
  • 1/2 cup tapioca flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup organic cane sugar
  • 1 cup fruit loops partially crushed
  • 1 cup milk 2%
  • 2 large eggs
  • 2 tablespoons olive oil extra virgin
  • 1/2 teaspoon vanilla extract
  • maple syrup optional, topping

Instructions
 

  • Preheat your waffle iron.
  • Place fruit loops in a zip lock bag and lightly crush them.
  • In a large bowl, add the dry ingredients except the fruit loops.
  • Whisk gently to combine. Then in another medium size bowl, add the wet ingredients and stir.
  • Then add the wet ingredients to the dry. Gently fold in the fruit loops.
  • Spray the waffle iron with non stick spray.
  • Add batter according to your waffle maker size. Cook until light golden brown.
  • Let them cool for 5 minutes and then serve with your favorite toppings. Enjoy!

Notes

Notes:
The gluten free flour blend I use already has Xanthan Gum in it. If your blend doesn’t already include it, you will need to add it . Generally it is 1/4 teaspoon of xanthan gum for every 1 cup of flour so for this recipe, use 1/2 teaspoon. Add it to the dry ingredients. 
Be careful not to overcook the waffles as that will mess with the mochi texture.
