For the Love of Lavender.

Have you ever bought a product and never used it? That is totally me – I buy an ingredient with intentions to use it and then it goes to waste. But for the love of lavender, I’m on a mission to turn that around.

I really love lavender and on our spring break road trip to California, we found this great fruit stand called Casa de Fruta. Not only did they have fruit and yes- wine, they also had lavender! I told myself – ok I will get some but I better use it all, I will not waste this!!!

Some History

Now I’m culinary trained (savory foods) however I taught myself how to bake by following recipes to the tee. For the sake of this blog and my personal growth, I told myself I want to start creating my own baking recipes. 

One of my things is that I create recipes on a whim. Which is asking myself what do I have on hand so I don’t need to go to the store, what needs to get used up first, etc. 

I see you pile of very ripe bananas….

Looking at a pile of very ripe bananas that my toddler didn’t eat through that week and staring at my lavender , I googled: does banana go with lavender. 

I was shocked to find out, it does- strangely enough I have never had the combo which is why I googled it in the first place. 

With the fate of my bananas and the 9.00 lavender that I vowed to use, I decided I would create a Lavender Banana Bread. 

The Results

As I have made this twice now, I’m pretty proud of myself for a few reasons:

It actually turned out the way I was hoping for.

My husband really enjoyed it.

This was stepping out of my comfort zone by creating a sweet/baking recipe. If only you could have seen my face when he was biting into it, I was thinking, please don’t make the look of disgust! LOL

Some things I love about this loaf is that its made with gluten free oats and the oats make a nice little crust on top. 

This bread can be eaten by itself or you can enjoy with your favorite vegan butter. 

While looking into my pantry the other day, I realized I had bought 2 bottles of it, so more lavender recipes to come! LOL

Delicious Vegan and Gluten Banana Bread with a touch of Lavender.

Equipment

  • loaf pan

Ingredients
  

  • 1 1/2 cup oat flour
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon salt
  • 1/3 cup cane sugar
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/3 cup coconut oil melted
  • 1/2 teaspoon vanilla extract
  • 2 large bananas very ripe
  • 4 ounces apple sauce
  • 1 tablespoon lavender

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add all the dry ingredients to a bowl and whisk them together. 
  • In a small bowl, add the bananas and mash them with a heavy wooden spoon or a masher
  • In separate bowl, add all the wet ingredients and gently stir to combine.
  • Add the wet ingredients to the dry, then add the banana. Combine with a spatula or whisk.
  • Then fold in the dried lavender.
    Spray a loaf pan with non stick spray and line with parchment paper.
  • Pour the batter in. 
  • Place in the center rack and bake for 55-60 minutes.
  • Check the bread for doneness and if needed, bake an additional 15-20 min.
  • Remove the bread from the oven and set aside for 10 minutes. 
  • Grabbing the parchment paper, transfer the bread to the cooling rack.
    Slice and Enjoy!
